Beef Rice Bowl

This Beef rice bowl made with some left over I had from the hot pot ingredients. It is a very quick and easy meal. You can make rice bowl with any meat or fish you like, the idea of rice bowl is having cooked meat or vegetables topping, then serve it with rice in a bowl.

Ingredients

Sweet beef sautée

  • Thinly sliced beef
  • White or brown mushroom
  • Half of onion (peeled and thinly sliced)
  • 1 garlic (chopped)
  • 2 cm of ginger (peeled and crush)
  • Couple branch of cilantro / coriander (optional)
  • 2 table spoon of sesame oil
  • 1 tea-spoon sesame seed
  • sweet soy sauce
  • salt and black pepper

Pak Choy sautée

  • 3 Pak Choy
  • 1 garlic
  • 2 cm of ginger (pealed and crush)
  • 1 table spoon of olive oil
  • 1 table spoon of sesame oil
  • salt and pepper

Omelette 

  • Two free-range eggs
  • 1 small knob of unsalted Butter
  • Chive (chopped)

Method

Sweet beef sautée

First, heat the sesame oil in a medium frying pan, add the garlic, onion, and ginger. Stir for 5 minutes.

Add the mushroom, stir until it’s soft and brown. Add the sliced beef, cooked for about 10 minutes, or until the beef is no longer pink.

Add sweet soy sauce and sesame seeds. Season with salt and pepper. Cook together for a few minutes. Turn off the heat, add some chopped cilantro. Set aside.

Pak Choy sautée

Cut a thick slice from the Pak Choy root to separate the leaves. Rinse and drain.

Heat the olive oil and sesame oil in a large frying pan or wok. Add the garlic and ginger, stir for couple minutes, add the stalks first, reduce the heat and cook for 3-6 minutes, tossing  until it crisps and tender. 

Then add the leaves, turning occasionally until  just until the leaves have wilted. Season with salt and pepper. Set aside.

Omelette 

Crack the eggs into a mixing bowl with a pinch of sea salt and black pepper. Beat well with a fork.

Heat a small knob of butter in a small frying pan on a low heat, and once melted and bubbling, add the eggs and move the pan around to spread them out evenly.

When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the chives.

Using a spatula, ease around the edges of the omelette, then fold it over in half. When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a chopping board and slice.

Prepare the rice bowl

Put cooked rice in a rice bowl,  top with sweet beef sautée, pak choy sautée, and omelette. You can even garnish it with Korean Kimchi or cucumber pickles.
